Other classics include hearty and delicious short rib beef stroganoff, traditional fish soup, chicken tabaka, venison tartare and salmon marinated with juniper.
ZIMA does much of its own fermenting, salting and pickling in-house and its homemade sauerkraut and pickles make delicious accompaniments to vodka infusions flavoured with fennel & tarragon or basil & strawberry.
